I’ve been posting dinner tidbits for a while now on my private blog and it seems friends and family love them so much that I’ve decided to share some overviews with you.
Monday: Turkey burgers, baked zucchini and diced red potatoes browned in a little olive oil in a skillet.
Tuesday: Hot dogs, baked macaroni and green beans
Thursday: Homemade (nitrate free) pepperoni pizza was planned because I had a mom’s night out scheduled for this month’s Moms of Twins Club but the store was out of Boboli pizza crusts so we had to think quick on our feet and made a pizza casserole instead (using wheat rotini noodles and pepperoni, spinach, cheese, sauce and diced veggies similar to how you’d layer a lasagna.)
Friday: Crockpot Southwest Chicken, brown rice, and organic blue corn tortilla chips topped with shredded Colby cheese and sour cream.
Saturday: Chipotle (Naked burrito bowls with brown rice.) — We go out so rarely these days but Chipotle is quickly becoming one of our favorites because of their dedication to natural and whole foods. They’ve even made a pledge to be GMO free by the end of 2014!
Sunday: Chicken Cesar Wraps (think a soft taco shell with a Cesar salad inside.), Applesauce, and steamed carrots.
